A bright, fresh, no-cook mango salsa with sweet mango, crisp bell pepper, red onion, cilantro, lime, and a touch of honey. Perfect piled on pulled pork sliders.
Peel and dice the mangos into small, even pieces and add to a medium bowl.
Add the diced bell pepper, red onion, and chopped cilantro.
Squeeze in the lime juice, drizzle the honey, and sprinkle with the salt. Stir gently so you don't mash the mango. Stir in the jalapeño now if using.
Taste and adjust: a little more lime for brightness, a touch more honey to soften the tang, or a pinch more salt to pull it together.
Let the salsa rest about 10 minutes so the flavors meld, then serve. Pile it on warm pulled pork sliders, or serve with chips.
Notes
Store leftovers covered in the fridge for 2 to 3 days. If raw onion is too sharp for you, soak the diced onion in cold water for 10 minutes and drain before adding. Sweetness depends on your fruit, so start with less honey and add to taste.
